  • 1 cup fresh spinach, chopped

  • Salt and pepper to taste

  • Optional: 2 tablespoons milk (or cream) for creaminess

  • Whole grain bread (for serving)

 

Instructions

Step 1: Prepare the Eggs
  1. Crack the Eggs: In a medium bowl, crack the eggs and whisk them together. If desired, add milk or cream for creaminess. Season with a pinch of salt and pepper.

Step 2: Cook the Spinach
  1. Heat the Pan: In a non-stick skillet, heat olive oil or butter over medium heat.

  2. Sauté Spinach: Add the chopped spinach to the skillet and sauté for about 1-2 minutes until wilted. If you prefer your spinach well-cooked, you can sauté it a bit longer.
